Decadent Chocolate Low-Cal Mug Cake

I’m a big supporter of the gluten-free, eat real food diet.  This dessert can even fall under the Paleo Lifestyle which is also a great one to follow.  Whatever lifestyle you lead, the desserts and treats should always be kept to a minimum as they can also pack on the pounds.

This rich and decadent mug cake is so simple to make, takes only about a minute to nuke and has less than 200 calories.  I prepare it so it has a molten center.  I can’t believe how soft and smooth this mug cake is.  You just have to try it and see.

It can be prepared in a mug or ramekin.  The dessert makes 6 oz so anything that holds 8 oz is recommended. The bowl I used is 8 oz which left some room to stir and rise.

While I do use almond flour from time to time, I try to use coconut flour as you don’t need to use as much which cuts down on the calories.  Coconut flour really soaks up the liquid so you need to use more than you would with almond flour.

I always look for organic whenever possible.

Decadent Chocolate Low-Cal Mug Cake

Ingredients:

  • 1 whole egg
  • 1/8 cup (2 tbls) of coconut flour
  • 1/8 (2 tbls) cup unsweetened applesauce
  • 1/8 cup (2 tbls) of unsweetened cocoa
  • 3 tbls of unsweetened almond milk
  • Sweetener (this can be varied) I’ve used 1 tbls of coconut sugar, but it adds some calories.  A packet or two of stevia works great.  Liquid Stevia is another option.  You may need more or less.
  • Pinch of salt
  • 1/4 tsp of vanilla
  • Cinnamon (optional)

Directions:

Beat the egg in your ramekin with a mini whisk, then add all of your other ingredients and whisk til it’s completely mixed. This is where you can add Enjoy Life Chocolate Chips.  You can also sub the liquid stevia with really any flavor you like.  I used chocolate raspberry which was excellent too.

Microwave for 1 minute and 5 seconds.  I know, sounds crazy.  Your microwave may need more or less time, but start out with 1 minute and then add 5-10 seconds at a time.  This leaves your cake with a molten center which is the way I prefer.

Calories = 186 with the 0 calorie sweetener.  If you use coconut sugar you need to add an additional 15 calories.  If you use chocolate chips, don’t forget to add those calories too. 1 tbls of Enjoy Life Chocolate Chips are 70 calories.  This recipe is so chocolatey, you really don’t need the chocolate chips.
